Sugar flap jack


It was initiated by Deshunzhai flap jack shop, run by Wang surname in the first period of 1930''''''''s. It was based on folk scraped battercake. Millet and white sugar were worn to rice paste and the battercake was taken off when cooked 80% or 90%, then folded to rectangle on Aozi (an iron board), and baked on coil base. Flap jack cooked by this means is crisp and tasty, and also not deteriorating, so it became the famous specialty in Jinan. Now, this flap jack has become the firstly-chosen local snack to outlanders to Jinan and also the best gift to present to friends outside.
